Easy Farmer’s Market Stir Fry

On Sunday I stopped by one of the local Farmer’s Markets and picked up some fresh vegetables. 2 cucumbers, 2 zuccinis, 3 red onions, a pound of green beans and a bag of lettuce for only $6.00! Today I finally had the time to make some stir fry with the lot of it.

You need:

  • 2 zuccinis (I used one green and one yellow)
  • 1 finely chopped red onion
  • 1 lb chicken breast
  • 1 lb green beans
  • 1 jar Thai peanut marinade
  • Garlic (to taste)
  • Extra virgin olive oil
  • Salt/pepper

Start by pouring olive oil into a pan that has been heated on medium heat. Add the garlic and onion as well as a little bit of the peanut sauce. Stir until the onion starts to turn clear.


Next, add the cut up chicken breasts and some more of the sauce; enough to coat the chicken. Cook until the chicken looks done on the outside, stirring frequently.


When the chicken seems mostly cooked, add in the vegetables. I chopped up the zuccini and  halved the green beans. Cover and let cook, stirring every few minutes.


When the vegetables begin to look cooked but still crunchy, add salt, pepper, and garlic to taste, as well as the rest of the sauce. Cover and cook for a few more minutes. Be sure not to overcook, as the zuccini gets mushy and gross very quickly once it is done if you continue to cook it.


It should look something like this. Turn the heat to low and uncover to let the sauce thicken. I added a little bit of flour to thicken mine.


I ate mine plain, but I would definitely recommend making brown rice or angel hair pasta if you are feeding more people. The recipe made plenty as is!
